beet greens rock!

Today I roasted some beets in preparation for having some in salads and for making ‘pink pancakes.’ usually I think I’m going to make something with the greens, but never get around to it. Tonight I washed them, cut them, and added them to a very hot pan with some sliced garlic and red pepper flakes. They were great. We ate them with rice and baked tilapia.

I’ll report on the pink pancakes tomorrow or wednesday.
