Strawberry shortcake recipe request

bridget asked me to post the recipe for the shortcake that I made this weekend. Here ya go:

  • 3 cups self rising flour
  • 1 1/2 tsp baking powder
  • 1 T sugar
  • 1 cup crisco
  • melted butter for tops
  • milk to moisten

in a large bowl, mix flour, baking powder and sugar. Using a pastry blender cut crisco into dry ingredients until well blended (it will get sandy looking)

you can put this dry mix into  a bag in the refrigerator and keep indefinitely

mix with a small amount of milk and then turn out onto a lightly floured surface and knead lightly. pat to 1/2 inch thickness and cut into rounds about 3 inches thick.

brush with butter and bake at 450 for about 10 minutes. tops will be brown. Best eaten warm…they tend to dry out once cool.

shortcake assembly

  • cut berries and mix with a little sugar…they’ll release their juices and get even more yummy
  • make whipped cream: whip heavy cream with a little sugar and vanilla until VERY stiff. be careful not to make butter
  • assemble biscuit on bottom, next strawberries and then (at last) a big dollop of whipped cream

Sorry I did not take pictures of the process. it was beautiful AND delicious.
